This is a great recipe for pancakes that doesn't take much work and tastes decadent. Jon choked them down saying they were "interesting". I think you appreciate stuff like this more when you can't have real pancakes.

Cream Cheese Pancakes
For four 6-inch pancakes/crepes
Recipe ingredients:
2 oz cream cheese
2 eggs
1 packet stevia (or any) sweetener (I rarely use sweetener)
1/2 teaspoon cinnamon
Put all ingredients in a blender or magic bullet (I use my Ninja blender). Blend until smooth. Let rest for 2 minutes so the bubbles can settle. Pour 1/4 of the batter into a hot pan greased with butter or pam spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter. I eat these with a little butter and sugar-free syrup. I think they taste better the second day though. They keep very well.
I was searching for Torani syrups online when I found Autocrat Coffee Syrup on Amazon.com. Apparently, coffee milk made with this syrup is the official drink of Rhode Island. The syrup is sold by Amazon in gallon containers.
Anyway, I believe in the power of consumer reviews, so I took a look to see what others had said about the product. There are three reviews for the product including one negative review. This one made me giggle.
